Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Put the listed items into a pan, heat until it reaches a simmer, agitating to dissolve. Next, take off the heat allowing it to cool completely. Pour into an sealable bottle, cap it and store chilled, it will last for about a month.
Preparing the Premix: Pour every liquids into a big jug, leave to sit for an hour, then pass it through , ideally through cheesecloth, making it completely strained.
For serving: Measure 85ml of your batch mix into your mixing glass packed with ice, and agitate lightly for a minute until cold. Filter into an frosted cocktail glass or a similar vessel, top with the cranberries and finish by giving it a brief mist of the essential oil above the glass.
